Is it possible to just fill a short pipe with some inches of carbon?

There are some DIY carbon filter guides here i think, i'll take a look.
You need "activated carbon" for it to take the smell as the air is filtered through.

If your safety and security depends on there being no smell, i'd spend the money and get a good one. It's a $100 investment which should provide years of smell free safety.

I know about the carbon, what I want to know is if I need to build it like the the pre made one or if I can just fill up all the space in a pipe with carbon, or will it be too little airflow?

Totally depends on the power of the fans and the length of pipe you plan to fill, as well as the size of carbon used (pellets or granules). In principle yeah, should work fine.

If you can get $20 you can buy a carbon filter. It's going to be about the same buying the material for dyi carbon filter. If your interested let me know. I can tell you where I got mine
