If the light intensity and the rest of the environment is correct - yes the leaves will perk back up before the pot dries out completely. Once some of the saturation goes away (usually about a 18-24 hours under HID) the leaves should perk up. If you're overwatering to the point of yellowing that's pretty bad. Yellowing from overwatering means consistently overwatering week in and week out. Even just 2-3 times of over-watering won't yellow the leaves.
Make sure the rest of the environment is good for the plant - gentle breeze, 82+ degree temps (over saturated media) and high intensity light. The more the plant transpires the quicker it will suck up what little bit it can and help dry up the medium. The medium will take longer to dry because the roots are suffocated and can't take in a lot / much water at all.
Always do weight and moisture checks, it's the best way to water. I'll also say add the knuckle deep test. Push your finger in the edge of the pot, the bigger the pot the longer the finger.. if you get to your knock and there's no moisture you can usually get away with slight watering. The best way to do it is the weight comparison of a dry droopy plant and a freshly watered plant. You never want to get to "dry droopy plant" and you never want to stay at "freshly watered".
