I'd hardly call my opinion expert :) - but i'll have a pretty good go for you!

Day 15 - Plant looks fine, leaves are flat and seems to be happy
All the other photos look over watered - droopy green and heavy limp leaves

Does your terracotta pot have drainage?

Yes after watering they both drip water out within a min
 
and is it raised or flat on the ground?

Edit: If it's flat on the ground - raise it.
I'm pretty sure you're drowning your plant. You can google "overwatering symptoms" and you will see pictures of plants that look very similar to yours.

It drains into the bucket then I emty the bucket a hour or 2 later
 
you have a terracotta pot, with a flat bottom .. with a 2 inch hole in the middle for drainage.

That is sat ontop of a 5 gallon bucket so that when you water it, the hole drains into the bucket?
Or did you turn the bucket upside down to put your pot on.

Sorry for the slightly silly (and maybe inane) quesions, just trying to get to the bottom of your (overwatering) problem
