I've been perusing the cookie recipes online and it looks like consensus is to bake at 375 degrees. I'm thinking, isn't this going to nuke the thc and maybe other parts of the profile? After all, we purposefully avoid decarbing at temps anywhere near that high so shouldn't we seek to bake more around 300*?

I usually bake at lower temperatures for a little longer. Because I think that way too.
But... the internal temperature of the 'cookie' does not get that high.
And it is only for a short time (cookies cook for 10-15 min) thicker like brownies 20 min)

Seems like having decarbed this stuff at 250* for an hour (CBD Crew recommendation for high cbd material) then doing an oil run in the MBM at 160* for 4 hours that the material has sustained a lot of heat without getting baked up again in cookie dough.

I couldn't agree with you more @turtle360
Even without the MBM you'd still be heating to infuse.
I tend to keep my heat low and slow and for as short a time as needed.
And really, it depends on what you want out of your finished product on whether you want a high or not.
IMO cannabinoids in their acid form are very beneficial.
