I read that a lot of CO2 in the air during flowering is good. So I thought that burning incense would give off CO2 and cover the smell of a flowering plant.

What do you guys think? Would it be worth trying? Or would there be toxic chemicals to plants in the incense?

Low quality incense - especially some brands from India are full of all sorts of toxic crap - I've stopped
using them...I'd be more worried about my own health rather than the plants...
Make some beer - stick a tube with holes in the release valve - the yeast gives off clean Co2...I've tried
it but unless you can really control it - (personally for me) it was not worth the bother - unless you are a good home brewer...and like beer!

You'd also be burning incense 24/7 for weeks - not healthy for anything methinks...

The amount of co2 that would be so low it wouldn't make much difference. Normal levels are usually in the 300 - 400 ppm range. To be effective it needs to be 3-4 times that amount. You would need to burn a hell of a lot of incense to reach those levels.
