I flushed this Sour Crack 17 days ago and have been feeding plain water since. All of the large leaves became dry/yellow and have been removed. The trichomes have barely ripened in the last 2 weeks and I don't know whether a light feed is a good idea at this point or if the damage is done?
I've not heard of a Sour Crack going this long and I was sure it would be done by now 3 weeks ago. Seeing roughly 50/50 clear/milky and maybe 1% amber. I've watered with cold water and reduced the light to try to speed up ripening but no luck it would appear.
I am using pm organic nutrients in soil.

Sloth, why did you flush when using organics? No need at all in organics, and she's been starved for 17 days more which may actually lessen quality, she needs some nutes to finish well... Tapping into fans isn't enough either, not all nutrients are mobile within the plant, and even for those that are, it's takes wasted energy to metabolize and transport them to the buds.
