I don't understand why light companies don't offer infinitely variable dimmer switches rather than step dimmer switches. The vast majority do not offer infinitely variable switches.

For those of us who like to dial in our light intensity step dimmers aren't the best way to go.
 
Are there perhaps basic differences between variable and step switches? For ex., do the step switches have that many contact points, and the variable ones are digital, fully electronic? Maybe the more contact-based switching is more rugged and better suited for the high stress tent environment, such as installed on top of a hot light fixture? And maybe one type can better deal with brown outs, fans/motors starting up and other variations in electrical supply? Are there significant differences in voltage going through the different dimmers (what do their power supplies put out)?
