Here is a primer on Indian Food:
The thing is no two Indian chef/or cooks follow the same recipe so for Tikka Masala they may all start with chicken in a sauce but the flavors are infinitely variable in all Indian food. Start with a busy restaurant full of Indian people. Go in with the intention of ordering some items you have learned about and point to the menu name without insulting the pronunciation, always ask how hot their recipe is because some foods are just too damn hot to enjoy. Always get the Cucumber Raita made with yogurt and cucumber in case something is too hot, it helps put out the fire. Most places I have eaten have a hot and a less spicy version for the same dish.
