Exactly….although it’s not the only emulsifier, which is what I was getting at…(I took a molecular gastronomy class while in culinary school…..various foams, and gels, and other foods that aren’t steak)
A boss once took us to the Cullinary Arts Institute as a holiday bonus. There were herbal "caviar" pearls using ?sodium alginate?, foams, espume, vapors, pastry sculpture, the whole deal.

Until springtime when we discovered it wasn't a gift. He included it as a taxable benefit ($500 income) the cheap bastard.
But the experience was like Wow. I would never have spent that much on a meal.
Of course portions are tiny so everyone had supper after that.
So weird thing happened today, i got a fresh crisp 2dollar bill in the mail from a survey company asking me to complete some general census shit for my area. I checked it out but it said it takes about an hr, and doesnt pay anything. I might do it if im bored, but im way too busy for that right now lol. But i have never received straight cash from a complete stranger in the mail. Just gonna give it to my kids like all the 2dollar bills i get.View attachment 1741289
