None of the local grocery stores carry anything decent so I'm going to have to visit an actual butcher. Do you think this is good enough to start with and learn how to use it? The big chain, Kroger, carries this stuff:
If you have a good butcher shop nearby and you can buy pork back fat, it is easy to render out your own lard. just do it low and slow. It also makes the best sausage.
