One of my strongest food memories was in Dallas. I ate a dish of sorts called a pork parfait. I got it as staff food. I thought chef was messing with me but no, it was a menu item. It was in a low mason jar, in layers of coleslaw and pulled pork. Topped with onion rings.
I was hungry so I dug in, and it was actually really really good. Filled up the calorie meter for sure. Poor liver.
