Costco has a twin-pack of whole chickens for .99 a pound. So naturally I have to buy one, less than $8 for two chickens. Here is the mental dilemma I now face: how to cook two chickens with the same best before stink date. Unlike many dates on food that are meaningless the ones on fresh chicken mean business. No matter how you cook them it will be too much. If I am going to put one in the freezer do I cut it up first or just chuck it in whole. If I put it in whole it has a 70% chance of being thrown out as too old because whole frozen chickens are a PITA to thaw cut and cook so, they are often overlooked. So I spend what fells like a couple of days mulling over my choices and shit it is two days past the date

we threw them into a big pot and boiled them with vegies and herbs, cooled and boned them.
I made some yogurt, cheese, green onion and cubed boiled chicken enchiladas for dinner last night. The sauce is onion browned in olive oil then a can of diced tomatoes a little Mexican Oregano salt to taste, blended course.
They were very good olé.
