The kids have been asking for pancakes, and I was using 1/2 wheat flower and 1/2 corn masa flour. Today I used only corn masa flour and I couldn't tell the difference. Better if anything.
Great Waffles:
3/4 cup of oat milk
1/2 cup of rolled oats
1/2 cup of Hazelnut flour/meal
1 tablespoon birch xylitol
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 large egg
Mix all dry ingredients in a large bowl, next in a high power blender (I have a Vitamix) place the egg 1/2 cup of the oat milk and the vanilla and stir it up to mix at low speed, then increase the speed to medium and add the dry ingredients, increase the speed to maximum and blend until smooth, add the remaining 1/4 cup of oat milk a little at a time to get to the consistency of a smooth batter - thin for crispy waffles or a little thicker for a softer waffle.
These are amazing with butter and fresh blueberry syrup or copious amounts of butter and Maple Syrup. Oh yeah did I mention they are GF
Last woman I met had children so early that they are in their 20ies and don't want their moms new druggie boyfriends pancakes. I mean, if I was on their end it would be weird as shit for me too.
