I just realized the correlation between air humidity and temperature. There is not less liquid, there is less water activity. So a jar with 60% RH at 72f is 53% RH at 36f about-ish according to my experiments with a cheap termo/hygro combo. Absolutely not lab grade. Maybe I would have known this stuff already if I had gone to class back in the eighties. Here I am, like a chimp with a mechanical watch in 2017.
