Frozen fruit will survive the cooking process…. I add frozen peaches to chocolate cake sometimes, and they have a good texture in the finished product. Thawed or fresh peaches soften to the point of nonexistence…

Taste it. If you find the flavor agreeable then, it is fine to use. If you question it, don't use it. You are cooking to your taste not mine. Just trust what you are tasting. All of the flavors carry through into the mole or macaroni sauce. The recipes are simple but many ingredients are seasonal so there will be variation in the final flavor but the texture should remain a constant. I recently used some "crushed tomatoes" that were really blended into mush. It is better to start with stewed whole tomatoes for the mac sauce. It is ok to have small bits of tomato in the sauce.

I’m going to make the enchilada sauce with half of it….I froze the other half for use in the gravy on thanksgiving.

It's a cabin...you could spring the front door with a nail file....:biggrin:..the cell door will give us more time to shoot any burglars....:shooty:..
