Anyone have any experience with induction cooktops? I think I want one, but not sure if I want to sacrifice the counter space.

Just recently bought one, and love it. But you need to understand the limitations to avoid surprises. You know about the ferrous cookware, but also understand that if you only have 10 settings, you may well find that you don't have exactly what you need. Also, some units will say that they control by the temperature of the pot, but that is not quite correct - unless you get seriously spendy, what gets measured is the underside of the deck glass, not the pot itself, and this makes for pretty wide fluctuations in the actual temperature of the pot. Don't expect it to hold anything to a precise temperature. Finally, the power output will almost certainly be controlled by switching the magnets on and off on something like a one or two second cycle, so this also makes for temperature fluctuations.

Bottom line, they can be great, I love mine, but be careful with expectations, especially if you have any unusual purpose in mind.

Got 2 new flavors this time….

Got chocolate chocolate and chocolate with pink icing! Then new ones got chocolate cream which looked like a hostess cupcake with white buttercream inside plus chocolate fudge on top and another small swirl of white icing (pops stole half already) and then there is a limited time flavor apple kuchen! Its the fancy one on bottom right!
