Always go for the tallest tent you can possibly afford/fit in your space...you'll eventually want to take a stab at a 12 week Haze variety or a long-flowering auto like LBH's hazes or Stitch's super autos, in which case you'll be screwed in a 4' tall tent.
As far as lighting goes, I've seen a lot of people get great yields from less lighting, 480w of blackstar will cover a 4x4 just fine...I have used my 240w alone in a 3x3 setup and it "works" although the blackstars don't really throw the light to the sides too much, so your total lighting footprint would be an issue with just one. I think using the 2 lights is totally fine, and will allow you to keep them closer to the canopy since you won't be worrying about the total square footage of coverage area as much.
As far as nutes/mediums go, feel free to use whatever you want, but in general I would agree with Agito and say that the Roots Organics is going to be a waste if you poison your microherd with chemical ferts. I would try either the buddha grow/bloom formula from Aurora or just brew some compost teas as required to fill in any deficiencies during flowering.
If you wanted the easiest possible solution, get some ProMix or Sunshine Mix and use the Lucas Formula (http://lucasformula.com/). If you want a simple setup that has shown repeated fool-proof results, I'd use the 2 part Gen Hydro flora series formula as calculated by H3ad on ICMag.com (link is on the lucas formula page above). Basically, he uses 3 or 4 ingredients, coco coir, perlite, and either distilled or reverse osmosis water and outcrops people using hundreds of dollars of high-end cannabis-specific additives. You could do 2gallon hempy pots with coir and probably pull an ounce per auto if you get your gear dialed in perfectly.
