I'd let it go till all the pistils are orange and there's more Amber trichs.
Tetra9 is a far better and more experienced grower than myself, but I've learned to leave it another week after I think it's ready.
Remember that you get Amber trichs on the leaves around the buds for weeks before the bud itself is matured.
I thinks it's a better smelling end product when it's fully matured too.
But if you cut now you'd still get high and have some great smoke.
I did Buddha cheese autos my last harvest and it's a knock out smoke even when chopped a bit earlier
