3 plants have been drying in my grow tent for 5 days now. I did a very light pruning before hanging the entire plants.
Humidity is around 47-52%
Temp 68-72

The buds seem fairly dry but stems still have a bit of bend to em. Maybe a small crackle when bending. Should I jar them today??? I really dont want to over dry them.

Buds dry from the outside in.a larger bud will feel dry but inside still moist.put em in a jar for a bit then stick your hand in the outsides will be a lil damp.take em out for a bit then back in jar.repeat, repeat then burp n burp.takes time and practice.
Good luck

Why are the buds fairly dry but stems still not snapping?

the stems are of course thicker along with being more fibrous cell walls which will retain moisture longer than the leaves, You dont want your stems to dry snap when checking dryness, They should bend like a green stick fracture, they give off a little "crackle" went bent , but dont break. The stems when in the jar will act like a moisture reservoir to help level out moisture

Something I picked up here on AFN .
Drying can be timed by relative humidity.

RH of drying environment = amount of days+one day

If your room is lets say 50% RH Then your dry time typically will be 5 days +1 day =6 total days
RH at 40% 4days+1day= 5days
only factor I have found to mess this up, the speed at which fan is blowing. Low and slow. You want air circulation, not fan blowing to dry a wet shirt.
