Indoor Drying in a garden shed?

Done this many times in shed. Just choose a fortnight where it is less than 28c every day during the initial dry. If the plant drys to quickly the chlorophyll can not dissipate and makes the weed taste really crap.
A slow dry at room temps is best. In your shed make sure the weed is in a cool place(18-22c) if possible. Then the remainder dry can be elsewhere if preferred.
Same can be done in your attic to dry weed but if it is your peak summer, shed and attic may be far too hot and dry too quick.
Some parts of Europe/Cannada may only have mild summers, then this is possible on almost any summer week. Also too cold and moist weather may produce mold whilst drying...that's worse yet to weed!

Awhh right that's cool then! Well I live in the UK and it's been about 20-24C lately which is surprising!
