There are lots of different LST methods - but here's a simple one i sometimes use.

If you have a pot with a "rim" at the top, you can tie wire, or string under the rim and tie it.
Then tie vertical loops around the string and branch you want to pull down and gently pull tight until the branch has gone to where you want it (not too far at once) and tie.

The only thing you can do at this point is bend the main cola down slowly and tie it with some string,or cut the main cola off.

In answer to your other question, no, there is no way to know how much you will get from a 2 foot plant, there are too many variables but if the plant grows ok there is no reason you couldnt get at least a couple of ounces.

LST, Lower the lights and try to trim any fan leafs that are not needed if they are using up space.
