Would it hurt to prune some of the larger leaves with no buds on them, just for privacy reasons really as they are nearly 6ft. Cheers

Depending on how rigid the main stalks are you might be able to brace the lower stalk and pull over the top. Check out the monster training manual located in the photoperiod section.

As for the flowering question. When a photoperiod will flower depends on individual plant genetics and the amount of darkness versus daylight there is(i call it the flower trigger). Most strains begin between 15 and 13 hours of daily light.
