Just by virtue of the picture you've posted, I'd say you have at LEAST 2-3 more weeks, if not a little more, but that thing will fatten up a bit!!

Yes it will
Give her a little P and K and watch her swell up. You'll want to see the plant eating those water leaves (leaves starting to die). Check your trichomes then and harvest whenever they tickle your fancy.
