At the restaurant we had a big double stack Wolf Oven. I tried to find a picture but nothing out there looks old compared to that monster. It had two nobs one for the top oven and one for the bottom It was basically off or on as the temperature control did not work well at all. You had medium at about 400°F and getty-up go maybe 550°F The doors did not have windows. When we were really busy we lit the bottom oven and the top would get really hot but food was passing through at a fast pace and the door open a lot so it stayed around 500°F during the rush. It was a bitch getting the food out of the bottom oven but that was working in the kitchen. The pilot light on the top oven would burn out the safety probe regularly from the oven running so hot so my uncle just bypassed it and we lit the oven with a wooden match in the morning. One morning I was lighting that top oven, I turned on the gas but my match head broke off without sparking and by the time I grabbed another match the oven had filled with gas. When I struck the match a blue flame shot out of that oven like a jet engine Whoooosh. It looked like I got a Chinese Bowl haircut only tilted back, as all my facial hair was gone except thin sideburns that met in an Amish chinstrap on my throat. I wear eye glasses and my eyelashes were gone but I must have closed my eyes fast enough that they were not hurt at all. In fact other than being scared shitless I was fine. My dad had witnessed the whole thing and as soon as he could see I was alright he could not stop laughing. He got the pilot light fixed the next day.
You had to learn how to get burned in that oven. It was deep and you had to reach way in to get or place the back plates of food. You only had 7" of clearance between the racks. If you bumped the top or bottom rack you had to control the reflex to jerk up or down, the only safe direction was straight out. What this meant was you would burn the part you were touching just a millisecond longer as you consciously pulled straight out. We hired a new waitress and on her first attempt to get food out of the oven she burned her arm and started ping ponging up and down. I grabbed a hand full of her blouse and pulled her out of the oven backwards. Her arm was fooked. I had to drive her to the hospital that was only 10 minutes away she passed out on the way. Workman's Comp covered it and she never came back. Out of the thousands of times we all reached into that oven burns that needed any attention were very rare. Little burns happened all the time.

wellllll, that'z a bit of a loaded question this time around
on the one hand, ya, all is good enuff....it'z the first o' the month, so i got my check & got all my errandz done & so forth....and fwiw, today officially makez it 25 yrz i've been in my same lil apartment....but on the other hand, it ain't much to celebrate, cuz i also found out that the current owner of our bldg is gonna be sellin the place to new ownerz sumtime over the next couple monthz, so....no idea yet who it is or what they're like, but all the same, it was def a fucked up bit of info to learn 
nothin to do but wait & see i guess
