Lecithin doesn't have a strong flavor when it's fresh, but it can get rancid, which is unpleasant. I've been using sunflower lecithin powder. It dissolves easily in water, and works like a detergent to make oil mix with water. Milk chocolate and cocoa usually has lecithin in it. It keeps the cocoa butter from floating to the top of your cup of cocoa. A half teaspoon of lecithin powder in my tea or coffee keeps infused oils from floating to the top.
