Warming up the unit right now with a nice little New York strip waiting.

That was pretty good!
Turn it on and set it to the highest setting for the warm up.
Once it was up to temp, I slapped the steak on and was rewarded with a nice sizzle.


It was actually the first recipe in the book, so I used their times. I used there for minutes per side. Very nice grill marks on the first side, but a little less on the other. ....still good enough though.
Absolutely perfect medium!

I think I'll cut a minute off each side on the next one .

Have you ever offset smoked eggplant?
When I had the eggplant I would smoke it underneath pork ribs or butts. Soooo damn good!!
That variety of eggplant was just really really good. It was very 'meaty'. I made quite excellent Egg plant Parmesan!
For my Mom and my Uncles, I had to cornmeal it and fry it. I definitely pigged out on it too
