Jr- that whole pH perfect deal is valid for while in solution only, and with water that's not hard,.. once in the pot, all bets are off, there are too many other influencing factors going on in there,... Does Coco Loco have any other things added into it, like lime? With coco, usually not,...
Oh, I missed this :
Tap water. pH is 7.6, 0048 ppm, EC is .98 straight from the tap.
something off here with the ppm's and EC... 1.0EC = 500ppm (USA), but your TDS meter(?) reads 48ppm? .... this begs the question as to why you pot is so alkaline, and if the EC is right that's very hard water,... 48ppm would be very soft water, so that needs to be clarified,... a lot of CaCO3 going into the coco can drive pH up.... There's no chart for coco, but it run somewhere in between soil and hydro, more toward hydro generally:
..... Do you even use water alone? A no-no in coco, gotta have Ca-Mg at least,... coco is a specialized medium, very different from true soil, even other peat based soilless, several do's and don't's mostly relating to coco's odd CEC properties,... Guru's tell me in hand watered pots like these, 15-25% run-off each time, with pH and ppm's noted going in and out; this is how you keep track of what kind of nute salt build-up is in there; r-o ppm's shouldn't be more that about 250ppm more than input,....
