I'm on day 20 just about to start LST maybe the next day or 2. Wondering if it's ok to remove these big fan leaves so the shoots can get more light? They are blocking the bottom completely. Need some advice!

Don't worry about bud exposure right now. Maximize leaf surface area for growth. As it fills out, then consider limited defoliation.

Appreciate the feedback. You forget a lot of things after 2 years and before the 2 years a I was a beginner anyways. Haha I'll wait and just let them grow as they should grow.
 
I suggest only defoliate when you have at least embryonic buds to be concerned about. Early plant branching is not going to be enhanced by removing a good portion of the plant's total biomass and light collecting surface area at this young age.

I agree with cannabis Mingus, let it grow as is til in full flower then remove fans growing into interior of plant and those that block sites.
