It's very simple, basicly is tomato sauce and diced tomato sauce (in italian it's "pelati", whole tomatoes of san marzano variety) and hint of tomato concentrated with a good handfull of onions, garlic and olive oil, it's all in the meat.

Veal stuffed with garlic, parsley, raisins and pine nuts

Put the meat on a high fire with oil, onions, garlic, for a couple of minutes, to toast, then add the tomatoes and tomato sauce, salt and pepper.
Sloooow cook for AT LEAST 5 hours. Best if cooked in pottery pan, helps to maintain the heat at a steady level.
Every hour dip bread in it to test

The meat will litterally fall apart, enriching the sauce. We serve it on big size pasta, with a good Parmigiano spread on it, meat bits and a good red wine!!
