Here's my tomato soup one, does 4 big bowls.
Ingredients.
2 Pints of vegetable stock, i use Bouillon stock powder, Marigold i think, it has a good flavour.
1 tin chopped tomatoes.
1 onion (size to taste, i use medium).
8 cherry tomatoes.
some roasted red pepper, to taste, i use about two thumbs size, if not roasted then a quarter or more of a fresh red pepper.
2 cloves of garlic, even if you don't like garlic because the flavour is weakened by the time it's cooked (and its very good for you).
Half a thumb of fresh ginger root, failing that use ginger paste or powder but Fresh is Best!
Lo-salt (66% Potassium) and pepper to taste.
Prep.
Chop the onions, ginger, garlic and pepper, slice the cherry toms in half.
Pour stock into a soup pot.
Cooking.
Fry onions, ginger, garlic and pepper in olive oil on a very low heat until onions just start to caramelise or longer to suit your taste.
Transfer the lot to a soup pot.
Add the tinned and fresh tomatoes.
Add salt and pepper to taste.
If you want to sweeten it, a quarter of an apple or more does very well instead of sugar.
Cook on a low heat, don't let it bubble just watch for steam production and test temperature as you go.
Get some fat bread and butter and dive in
