Been to long since I've had homemade fresh bread.

You just need one of these to cook it in:

I have made some outstanding bread in there. The big problem is how big it is. It takes 12 loaves at a time to make the crust come out right. It is the moisture escaping from the loaves while cooking that makes that beautiful crust. Making 12 loaves at a time requires a commercial mixer and proofing box to be efficient. I don't have them.

I learned a trick back when I was a cook and that was to put bricks in a tray of water in the bottom of a regular oven. Or you can intermittently throw ice cubes into the oven for extra humidity. Both of these methods help produce a nice crust.

Yes I have tried several "Tricks" but nothing works like a full oven.

Try putting a pan of water in with the loaves if y ou need more moisture. Works a champ
