It is a lot of work, your chained to the kitchen for a couple hours if you do it right. BUT, you'll never have a better turkey! I usually do it every other year. I did a 25lb. bird once for a large gathering. they wiped it out in 45 minutes and looked for more!
We have a nice Blackened Turkey and a kitchen full of tipsy cooks.
What side dishes are we going to have?
One thing I know that will be on my table is: Kahlua Candied Yams
4 medium-sized yams 1/4 cup butter 1/3 cup brown sugar (I substitute with Splenda brown sugar)
1/4 cup Kahlua
Boil yams until tender but firm, let cool slightly and peel.
Cut yams in serving size pieces.
In heavy skillet, melt butter with sugar. Add Kahlua; cook 1 minute.
Add yams; turn until brown on all sides. Cover. Reduce heat, cook about 15 minutes.
Turn yams once more before serving.
Serves 4-6
*My kids like marshmallows on their candied yams...I get extra "Peeps" at Easter time and have sugar free marshmallows.
