You can cook stuff in sous vide. Say you wanna play with a dish and get an egg with a stiff yolk but a runny white or stuff like that. You can do that in a sous vide circulator but normally, it's to slowly warn your meat and melt it. So it's maybe in-between cooking and heating I guess.
I am scared shitless of microplastics honestly. But yeah, I do what I can but it's not much. I try and not store in plastic and I don't heat in it if I don't have to
