depends what books we read and what neck of the woods we grew up in.our terminology slightly different.
to me drying is the hanging up for a week,and the first couple of days in jars being burped.when they hit 62%ish i consider it dry.they are then curing in jars until ive smoked it all.
no right n wrong just a grey area.
