How do you know when the seeds are mature enough?

I have a seeded plant and the leaves around the Pods are turning brown. not molding just at end of life.

the easiest way is looking at them , the "pod" will slightly open revealing the seed inside , if its white or green it aint ready , wait till you see a nice darkness like you would on a seed you paid for

That's pretty normal, the browning of the leaves. All the plant's energy is going into producing seeds. I usually leave my seeded branches on the plant for about 2 weeks after I pick the unseeded buds. I've let them go as long as 14 - 15 weeks until the pods are splitting open and the seeds are dark and mature.
