BANGERS AND MASH
A British staple, the ‘mash’ part of the name is easy to work out (mashed potato), but where does the word ‘banger’ come from?
It comes from the sausage, one of the oldest types of processed food in history, can be traced back to ancient times.
British pork sausages have been mass produced since the 19th century.
The Victorians, sceptical of what was actually in a sausage and suspecting the presence of rather a lot of horsemeat, nicknamed them ‘Little Bags of Mystery’.
After the outbreak of World War I, food shortages led to a dramatic reduction of meat, of any sort, in sausages.
Instead, producers packed them out with scraps, cereal and water, which caused them to pop and hiss when cooked on shovels over open fires in the trenches of northern Europe — hence ‘bangers’.
A British sausage needs to have 32% meat to be classed as a sausage and the average sausage has around 42% and the meat content can go up to 99%.
As a sausage with less than 32% can not officially be called a sausage under the trade description act, manufactures will label them "Bangers"
In general I like a 85% meat sausage with the other 15% being made up of the casing , Rusk ( Dried unleavened bread made in to crumbs) herbs and spices.
Tonight it will veggy sausages as my lady is a vegetarian.
The word "Bangers" is also affectionate colloquial term for any sausage especially when served with mash which is evocative of childhood memories when you Mum would give you "bangers and Mash"on a cold winter evening, leaving you feeling warm and toasty. It is also further enhanced with a thick onion gray and some peas on the side.

Good examples of bangers are old reps cars which have been to Mars and back.
Most Private Hire Taxis are bangers and they are also used to race around dirt tracks for fun.

The word banger meaning sausage is not just used in the UK but is in the US and the sign below shows, I imagine though it is probable descended from British slang but I can't really say either way.
