Harvest & Curing Ammonia smell dry buds?

So recently harvested my northern lights auto I've been growing, let it dry hanging up for about 7 days then trimmed it and out it in Mason jars. Before I put the bud in I was worried I over dried it slightly as the buds were fairly crispy, but after just a day the jars gave off a off chemical smell when burped. I let the buds dry out even longer yet the smell still keeps coming up. I can't stress to you how dry these buds are now, think they might be a bit ruined tbh but I'd take dry weed over moldy weed. Any suggestions what's causing the smell?
 
In my experience ammonia smell is from wet buds compressed. When I overdry I put a piece of bread the size of a quarter in the jar for a few hours which usually helps.

I would love to hear more about this. I am concerned about the ammonia smell myself. I harvested Saturday morning and my stalks were snapping today so I trimmed it up and put them in a glass jar. Once in the jar, after just a few hours there was a new unusual smell I didn't recognize. I popped in a humidity sensor and it started at 54% and after 3hrs it sits at 57%.

I let some fresh air in and will continue to do so every few hours. I'm wondering whether with low humidity I should still be getting this smell.
 
So I ended up just getting some bovida humidity packs, the 62% kind. Bud is nice and fresh now, but still has slight hints of the chemical smells. Guess it's just the smell of curing? Cause I know there's no mold on them. Definitely worth it to get those packs, I hear they take away a bit of the terps smell but it makes everything so stress free.
