So. with Muddy's help this definitely seems to be a low pH issue, most likely caused by the

OF soil as I did add lime to the soil mix and I pH my water to 6.5 before every feed, but its locking out P and Mag.
Muddy did give good advice on how to correct, though I did take a little of my own artistic license on what I ended up doing.
Last night I top dressed the soil with ~2.5 tbsp of agricultural lime and dolomite lime, (are these 2 the same?) the agricultural lime was in a completely ground/powdered form and the dolomite lime was in more of a pellet form so I thought it best to mix the 2. I then gave it a heavy watering of pHed water, not nearly enough to consider it a flush but a decent amount of water. The run off was coming in at just under 7 after this.
Today I gave a light feed with 1/4 strength nutes and cal mag just to try and add a little sustenance back into the soil that I may have leached out. Of course the water was pHed to 6.5 exactly and runoff was coming in at 6.6 - 6.7. Maybe I slightly over corrected but it seems for soil i'd prefer to be just a touch over 6.5 rather than under.
I have to travel for 2 days for the holidays which definitely makes me a bit nervous but when I get back on Friday or Saturday I guess it will be the moment of truth so to speak. I will update with pictures then!
