1/4-3/4 inch is good. I follow a simple rule of Jorge Cervantes. To plant your seed, double the seed width deep.
As far as watering there is no set schedule. But I water my pots lightly before transplant. Mist tops of pots when becoming dry (1-2) days, and depending on the knuckle test ( sticking finger into soil to knuckle) you should feel moisture on the tip of your finger). If not its time to water. During the first week I usually water 50ml to a plant every day day and a half. But that is strictly on based on the moisture of the medium I use.
All mediums will be a little different drying times and when to water. Familiarize yourself with a PH as JM recommends really a must IMO, PPM and a soil moisture meter if you can break the bread. If not use knuckle test when smaller. Once they are bigger or in bigger pots I like to keep an extra pot with just dry soil around. I then pick up the soil only pot and compare it to my pots with plants. Before you know it you will totally realize a weight difference and can judge watering by how heavy the pot is.
