I would say it's mainly to get the moisture out or should I say most of the moisture out
Think about it logically mate. If you put fresh cut flowers into a bag your trapping all the moisture in which will cause issue's in my opinion

I just do what my dad taught me and over 40 years I've never had a crop go moldy or rot issues whilst drying. I have growing but never in the drying stage

Anyone who's done outdoor for 2 years+ if you ain't had a rot issue something ain't right

perfect advise mate! Only time I think paper bags are good right off the plant is if the RH% is so brutally low you need that higher "air RH% buffer" to slow the drying down... too fast and the "death thoes" chemistry can't take place properly, and you get that harsher greener tasting funk,.... I think a certain amount of moisture needs to be present for this to happen....
I wish I was there to sniff too! And sample...
