Harvest & Curing Help With Cure

Hi Guys hope all is well

have a few issues here which keep happening to me. iv only been growing for a year and up to now have grown about 6 plants. so i consider myself still a new-bee at this. the grows have gone really well and once it come down to the chop and dry i feel something is still going wrong for me. i check thricomes and flush well. once cut i dry is a large box with a small PC fan pumping a light air around and a small quit hole. the dries goes down well, i can keep the humidity in the box around 45% to 55% and after about 5 days they snap well off. the bud isn't completely dry as is crispy on the outside and still a little spongy on the inside.
i then put into a jar. however this is where i use a product called Boveda (62%). this product keep the humidity in mason jars at a steady 62%, which i have read is the perfect humidity to cure. this pack works both ways creating more humidity when its low and less when its high. i then check it everyday and just see how it feels etc. and from it being crispy is softens up.
i usually cant fight the urge and just grab a small bud and see what im dealing with and i can honestly say i notice a lovely taste and can understand what it could taste like.
i keep curing and again after week or so try another bud, this time the bud again feels lovely and crumbles well but now when i smoke i have a harsher taste.. this is where i am totally lost

even though i have Boveda pack inside the jar i still tend to burp it a little and im always checking it too.

Can u please shed some light on where im going wrong. iv tried it the traditional way without Boveda and i normally get the same results,
2 more have just been cut dried and today put into jars without Boveda.
Just some help on my next step

Sounds like you just need to let it cure a little longer. I like at least a 30 day cure for best results. That's about 5 days of drying, 2 days of getting the buds in the jar to the proper humidity, and then a 30 day cure.
The slower you can let your buds dry (without causing mold) the better. Some strains need more of a cure then others to get a good taste too..
