So, by letting it warm up the day before you are sorta waking up the yeast….you put it back in the fridge to slightly rise overnight, and then the next day as the dough warms, the yeast are very active….creating gases, and causing the dough to rise, build gluten…. Room temp dough is more pliable, easier to work with.OK will do but what it's do by doing this?
When I do it i just take it out of bag and bring to room temp on the counter in a bowl under a towel then spread out after it's risen some . But i really have no clue why I do that![]()
