Boom! Deboned, rolled, tied and salted pork shoulder.
Tomorrow I’m going to do a classic style roasted pork shoulder with crackling….but I’m going to cook it on the smoker, instead of in the oven.(The final crisping of the skin will be done in the oven, under the broiler though)…View attachment 1771740View attachment 1771741
