I made a small cheese smoker out of a bain marie trays . 3 piece , Bottom is where the wood chips go , middle one has holes in the bottom and the top one is the lid . I have the wood chips at one end and use a gas burner to fire up the wood chips .
This next photo you will see two different flavorings I have used as well , cracked pepper and a coffee bbg rub mix , first time i have used the coffee rub , I vac pack them once cooled down .
Great for late afternoon with crackers and having a wee sip .

Ooooo that is making my tummy growl mate! I've not had decent smoked cheese in bloody years! I have a small gas smoker, but not sure I can do cheese in it, keep it cool enough...

... the Goods are gonna pour outta that beauty.... I bet you can fetch a fine bit of coin for your products, if you aren't already! Any friends/chef's or something like that around you can set some bait out on? In the past my Dad's recipe for smoked salmon was a major hit! Folks pay material costs plus a labor fee; line a few to several up and you can bang out some payola for a day's work!
