I live in on an island just north of the equator in the middle of the Pacific, so humidity is always high. This makes for great growth, but oy vay the fungus is an ever present issue.
I am very vigilant and try to catch any buds that even look like they are going to sprout cotton fluff before the harvesting process.
I employ the brown bag method as it takes less time then hanging the branches, still I lose some buds in bag to fungus. Yes I shake the bags and burp them at least 3 times a day.
I wonder if a good food dehydrator would aid in the curing process. Does anyone have any experience using a food dehydrator for curing?

Don't bag them if you got high RH. It will make it worse. You want lotsa airflow. If your room RH is around 70++ like mine is, you can try leaving a fan on. It will take longer to dry but molds should not develop if your airflow is good.

A sureproof way is using the AC for a couple days until they are dry enough. My AC at 22C gives me RH of about 50++ so its perfect. Then turn AC off for the remainder days, using only fan. They should be dry enough that mold won't appear. Of course, you can use the AC until they are ready to cure but that will raise the bill more too.

Hang them or buy a drying mesh net. Don't bag them anymore.
