We are following DubV with the Paleo lifestyle.
In looking at recipes I am always tweeking them for sugar free and medibles.

This chocolate cake is the moistest and tastiest I have made yet. It's like a brownie.

10 - 15 dates (large dates use 10. I had small dates & used 15)
1 cup applesauce
3 eggs
3/4 cup canna butter
2 teaspoons vanilla extract
1/2 cup coco powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup strong brewed coffee
1/2 cup coconut flour

1. Place dates in food processor and puree
2. Add applesauce and pulse til combined.
3. Place fruit puree in bowl and add eggs, vanilla, canna butter and coffee
4. Mix well until combined
5. Combine dry ingredients in separate bowl.
6. Slowly add dry ingredients to wet.
7. Grease 8X8 baking pan with coconut oil, pour in batter and smooth evenly.
8. Bake 350(F) 30 to 35 minutes or until toothpick comes out clean.
9. Can top with whipping cream ( cake was so moist, it does not need this)

* There is a variation, instead of applesauce you can use ripe bananas. I haven't tried this but I am gonna! HeeHee

Also I usually bake my medibles at a lower temp for longer time. Since we want to use this for nite time medible, I did not worry about vaporizing the thc. Mostly concerned about the other cannabinoids.
Now, I am a light weight, but one of these (normal brownie size) knocked me out, got a good nights sleep and could still feel the effects in the morning.
 
I like that you are using dates.

I hadn't thought of trying that. It's expensive, but
dates are a ton better for you than white sugar.

Btw, I make coffee ice cubes. You find a good light roast. Medium is OK,
but light is better.

You use a Melitta Manual or French Press so you can control the time.
You use 3 or 4 times as much freshly ground coffee as you normally would.
Put some ice in the bottom of the carafe, you don't need a lot, maybe 10 cubes.
Then take some water at 160-180F and pour it onto the grounds. Timing is tough,
you want a good extraction, but you don't want a lot of the acidity in the coffee.
Perhaps 30 seconds. You have a real tradeoff between quality and quantity going on here.
So basically it's your call.

You then pour the coffee into an ice cube tray and throw it in the freezer. After it's frozen, you
can throw the cubes in a plastic bag.

I make a hot cocoa that is really hot, and then throw in a cube to make a mocha.

I want to try your recipe, and I'll throw a cube into that.

I also want to try and make a Cuban style coffee with the cubes.
