I will be ready to begin this process for the first time in a couple of weeks. Though I haven't done it yet, I have done TONS of research, and from everything I have read, it seems that you are making it too complicated. You need to leave them in the bag, the first time, closed, and stop messing with them. most things I read say 3-5 days. THEN open the bag and check them. They SHOULD seem crispy and dry. The Jars equalize the moisture by allowing the moisture in the center of the buds to move toward the outside. You thought they were dry, but after 12 hours in the jars, you see that they were actually still wet.
The next part of the process further removes the chlorophyll (Hay smell). As I understand it, when the jars are sealed for longer periods, an anaerobic(Thrives in a 0 oxygen environment) bacteria forms, which slowly consumes the chlorophyll, removing the hay smell.
I have seen lots of people say to close the bag up and leave it alone. The more you open the bag, remove things, obsessively check and re-check, the more stuff you keep letting out of the bag, and the more you are allowing the humidity to fluctuate, when what you want is a steady semi-sealed environment that allows the moisture to be absorbed into the paper of the bag, while allowing the terpines to be retained in the bag and be continually reabsorbed by the flowers (by not opening it).
With the jars, my research indicates that you let it sit, sealed, for 12-24 hours to allow the moisture to equalize, then burp. Then continue to burp regularly until the desired humidity is reached. Then when you can seal it for days/weeks at a time, the bacteria will further improve your taste and smell by consuming the chlorophyll.
