I just made a batch of pot laced molasses cookies. I was surprised by how good they turned out. The trick is to add extra molasses, that covers the taste of the pot.
I also like to cut the sugar nearly in half, use half oats and half flour, and an extra egg to help hold it together. I like things less sweet.
On an unrelated note, I got a bag of Meyers Lemons at Trader Joes yesterday. I want to try making marmalade with them. The skin has one of the good chemicals you find in pot. I think that's why the Brits love it. Fresh fruit used to be hard to come by in the old days in England, and that chemical helps the body get by with less Vitamin C.
