Extraction Cannabutter cooking - how hot is too hot? and other questions

Please excuse my cooking newbness, I eat a lot of takeout. I'm going to try my hand at making cannabutter and then some brownies and have been browsing the web's popular methods and recipes.

I'm not a good cook, so think I'll use a thermometer to make sure I'm 'simmering' or using 'medium heat'. But what sort of temperatures are these terms?
I understand THC does its thing @ 100c/212f, so am I looking to 'simmer' my butter/water/pot mixture at this temp for 3 hours or use a different temperature? If the mixture is 'boiling' at 100c, then won't a 'simmer' be a lower temperature?
What is too low of a temperature to convert the THC?
If the mixture gets too hot, how long until the THC is destroyed?

One popular recipe calls for cooling the mixture overnight, and then melting it again the next day before straining into the final container. Does anyone think this is beneficial?

For the brownies,
I see recipes calling to lower the oven temperature by 50 degrees, so the brownies should cook @ 275 f I suppose. Won't this cook out the THC since it's over the boiling temperature? Why 275 and not 325 then?

Do I have this all wrong?

No it won't cook out the thc. There is a decarb chart on here that might help you a bit. Ill go grab you the link.
 
Here's the result of my cooking attempt last night. It's very green.... like the color of an avocado, seems like I should strain it again maybe.
I used 14g of Berry Ryder leaf trim ground up in a coffee grinder & 1/2 pound of butter, simmered for 4 hours at around 180f. I removed the butter top and blotted it with a paper towel to try and remove some of the gunk on the underside.

You budder looks very good. You had good advice. Because it really looks like you did a good job. That is the color you want. Now about the CBD's, and THC's.

When we started doing this (Root66 and I), we thought pretty much we would use the straight type of method you are using. But since we have found many ways of cooking in butter to make budder. We have also found it easier to extract in oils like Coconut, which would actually work better in a recipe than butter, and it is better for you. If you would like to know more about these, I can't recall them off the top of my head. Let me know, and we can point you in the right direction.

Root says she will be by and explain how to use the water method, cuz she is awesome like that.

The heating of a brownie, or a cookie, in temps of 300 or 350 does not affect the effect (strange prase) of the cannabis because you are only heating the product to about 160 degrees or so when baking.

Awesome, thanks for the approval Eek, now I'm excited to continue! I've seen the coconut oil recipes too, but thought this would be a bit easy for a first timer. I usually make hash with my trimmings but now am turned onto this cooking stuff. I'll be back in a few with the results of the brownies.
