...Destemmed the ~16 week Gelato N' Chill from the dryer after ~4-5 days due to ambient RH dropping into the 50s%; however, it was still a little soon and I had to burp/spread the batch for another ~3 days to get it to settle at ~62%/5+oz (~150+g):
